Alright, I promise this is the last blueberry recipe…for a while at least! It’s been fun using blueberries since I normally don’t buy them that often it was great to use them in different ways. This one is definitely a keeper (do I say that about every recipe?)! Although the cups are made out of all natural ingredients it still is a higher calorie dessert so don’t blame me if you get addicted to them! You can’t say I didn’t warn you :)!
Where I found the recipe:
1 cup coconut oil
1 cup coconut butter
1 cup blueberries
1/3 cup raw honey
1/4 cup unsweetened shredded coconut
1/4 cup cashews (chopped)
1. In a small saucepan add blueberries and honey.
2. After blueberries have “melted” add coconut butter and coconut oil and mix well.
3. Remove from heat and add shredded coconut and cashews.
4. Place in muffin pan and freeze for approx 20 minutes.
Makes approximately 12 cups
