Zucchini Brownies (Paleo)

Today is my husband’s birthday so I wanted to make him something sweet for it. Brian loves loves brownies so I thought I would give this recipe a go. Now in the past I’ve made healthy brownies and they were not so good. I remember I made beet brownies once back home and needless to say nobody ate them. These brownies though my friend are bomb! You can’t taste the zucchini and it’s amazing how there’s no flour in it and you can’t even tell. This is a must keep recipe and if you’re skeptical you have to try it! I promise you won’t be disappointed. I’m a sweets kind of girl and I don’t feel like I’m missing out at all on these.

zucchini brownies

Zucchini Brownies (adapted from http://fastpaleo.com/zucchini-brownies/)

Ingredients:

1 1/2 cup grated zucchini

1 cup almond butter

1/3 cup honey

1 egg

1/2 tsp vanilla

1/2 tsp almond extract

1 tsp baking soda

1/2 tsp nutmeg

1/2 tsp allspice

1 cup dark chocolate chunks

Directions:

Preheat oven to 350 degrees

Mix all ingredients in bowl except chocolate chunks

Grease a 9×9 pan

Put bowl ingredients in pan then sprinkle the chunks on top

Cook for approximately 20-25 minutes or until toothpick comes out clean

*Side note: The original recipe called for 1 cup of almond butter, I ran out so used the dark chocolate almond butter. I also just love almond extract so decided to half it. Either recipe you use I’m sure you’ll love these moist brownies that don’t taste healthy!
